The healthiest way to lose weight is neither crash diets nor bursts of exercise. The body likes slow changes in terms of food and exercise.

For example, someone who hasn’t exercised for years shouldn’t rush into running miles a day or pounding the treadmill. Not only will the struggle to do so leave you feeling disheartened and demotivated, you’re also far more likely to injure yourself and set your fitness levels back further.

To lose weight, you need to get your body to use up these stores of fat. The most effective way to do this is to:

1、reduce the amount of calories you eat
2、increase your levels of activity.
This is why experts talk about weight loss in terms of diet and exercise.

Introduce changes gradually

Small changes can make a big difference. One extra biscuit a week can lead you to gain 5lb a year – cut that biscuit out of your diet and you’ll lose the same amount.

You’re also more likely to stick to, say, swapping full-fat milk for semi-skimmed or making time for breakfast each morning than a diet that sets rules for all foods.

You should think of weight loss in terms of permanently changing your eating habits. While weight-loss goals are usually set in term of weeks, the end game is to sustain these changes over months and years, ie lifestyle change for life.

Someone who increases the amount they exercise, but maintains the same diet and calorie intake, will almost certainly lose weight.

No matter if you hate gyms – even light exercise, such as a short 20 minute walk, will be beneficial if done most days of the week.

There are lots of ways to increase the amount of activity you do. Team sports, racket sports, aerobics classes, running, walking, swimming and cycling will all improve your fitness levels.

Find something you enjoy that’s easy for you to do in terms of location and cost. You’re then more likely to build it into your routine and continue to exercise, despite inevitably missing the odd session through holidays, family commitments, etc.

3、Use commercial breaks between TV-programmes to stand up and do exercise, or consider using an exercise bicycle in the living room while watching your favourite programme.

Reduce intaking calorie

If you’re overweight, you can’t continue with your current eating habits if you really want to lose weight.

It’s not possible to reduce body fat while eating lots of food, cakes and sweets. This doesn’t mean you can never have any treats, but you need to learn how to limit these foods to small quantities – say, for special occasions.

In terms of weight-loss, you can get your body to use up existing stores of fat by eating less and making healthier choices.

This doesn’t mean crash diet (anything less than 1500 calories), which usually ends up with you either getting weaker or giving up in desperation. Quick-fix diets can lead to a yo-yoing effect of drastic weight loss followed by weight gain, resulting in a vicious cycle.

There are no shortcuts to losing weight in a healthy and reasonable way.

Eating 300 to 500 calories less per day should lead to a loss of between one and two pounds per week. This is a realistic target. It may seem slow, but it would add up to a weight loss of more than three stone in a year.

Fat contains the most amount of calories out of all the food types (protein, carbohydrates), so a good way to achieve this is to cut down on fatty foods and eat more wholegrain bread, fruit and vegetables.

Below are ways to reduce calorie intake without having to alter your diet significantly.

 1、Replace fizzy drinks and fruit cordials with water.
2、Swap whole milk for semi-skimmed, or semi-skimmed for skimmed.
3、Eat less lunch than usual. For example, make your own sandwich and limit the use of margarine or butter and full-fat mayonnaise (store-bought sandwiches often contain both).
4、Stop taking sugar in tea and coffee.
5、Have smaller portions of the food you enjoy.
6、Avoid having a second helping at dinner.
7、Cut out unhealthy treats – such as confectionary, sugary biscuits and crisps between meals.
8、Cut down on alcohol intake. 

All these things will influence your health in a positive way.

Finally, don’t be tempted to skip breakfast – or any meal to lose weight. While skipping a meal will reduce your calorie intake for that hour, it will leave you much hungrier later on.

Not only are you likely to overeat to compensate, but you’ll often make bad choices to fill the gap: a cereal bar is not as healthy as a bowl of cereal or as filling, leading you to ‘need’ something extra for lunch.

Irregular eating habits also disrupt your body’s metabolism, which makes it harder to lose weight in the first place.

Be patient and persevere

It might take a week or two before you notice any changes, but they will steadily appear. After the first month you’ll be able to see the results and measure them in terms of looser fitting clothes.

Keeping your motivation up is one of the most difficult aspects of dieting. There will be days when healthy eating goes out the window, and there will be weeks where you may not lose any weight – or put a little back on.

This is normal for everyone – dieters or not – so don’t let it undo your plans for a slimmer you. You’re not doing anything ‘wrong’, but you may need to look at your plan. Do you need to increase your activity levels? Make a few more changes to your diet? Put more effort into sticking to your current plan?

The other side of this is to make sure you celebrate your goals. While there’s joy enough in stepping on the scales and seeing them dip lower, be sure to mark long-term progress with a reward – such as new clothes or time off from domestic chores.

Celebrating is also a way to involve your nearest and dearest – it’s up to you whether you want their encouragement in the form of gentle reminders not to eat certain foods. But support from other people can get you through the bumpy patches.

Studies show that overweight women who lose between 10lb and 20lb halve their risk of developing diabetes. For men, the risk of heart problems reduces considerably.

Generally, we gain weight as we age. In particular, women increase their risk of heart attack and double their risk of dying from cancer.

History

The word “bungee” originates from West Country dialect, meaning “Anything thick and squat”,as defined by James Jennings in his book “Observations of Some of the Dialects in The West of England” published 1825. Around 1930 the name became used for a rubber eraser. The word bungy, as used by A J Hackett, is “Kiwi slang for an Elastic Strap”.Cloth-covered rubber cords with hooks on the ends have been available for decades under the generic name bungy cords.

In the 1950s David Attenborough and a BBC film crew brought back footage of the “land divers” (known as “Naghol”) of Pentecost Island in Vanuatu, young men who jumped from tall wooden platforms with vines tied to their ankles as a test of their courage and passage into manhood.A similar practice, only with a much slower pace for falling, has been practised as the Danza de los Voladores de Papantla or the ‘Papantla flyers’ of central Mexico, a tradition dating back to the days of the Aztecs.

A tower 4,000 feet (1,200 m) high with a system to drop a “car” suspended by a cable of “best rubber” was proposed for the Chicago World Fair, 1892-1893. The car, seating two hundred people, would be shoved from a platform on the tower and then bounce to a stop. The designer engineer suggested that for safety the ground below “be covered with eight feet of feather bedding”. The proposal was declined by the Fair’s organizers.

Bungee at Kawarau BridgeThe first modern bungee jumps were made on 1 April 1979 from the 250-foot (76 m) Clifton Suspension Bridge in Bristol, by members of the Oxford University Dangerous Sports Club. The jumpers were arrested shortly after, but continued with jumps in the US from the Golden Gate and Royal Gorge bridges, (this last jump sponsored by and televised on the American program That’s Incredible) spreading the concept worldwide. By 1982 they were jumping from mobile cranes and hot air balloons.

Commercial bungee jumping began with the New Zealander, A J Hackett, who made his first jump from Auckland’s Greenhithe Bridge in 1986.[8] During the following years Hackett performed a number of jumps from bridges and other structures (including the Eiffel Tower), building public interest in the sport, and opening the world’s first permanent commercial bungee site; the Kawarau Bridge Bungy at Queenstown in the South Island of New Zealand.[9] Hackett remains one of the largest commercial operators, with concerns in several countries.

Despite the inherent danger of jumping from a great height, several million successful jumps have taken place since 1980. This is attributable to bungee operators rigorously conforming to standards and guidelines governing jumps, such as double checking calculations and fittings for every jump. As with any sport, injuries can still occur (see below), and there have been fatalities. A relatively common mistake in fatality cases is to use a cord that is too long. The cord should be substantially shorter than the height of the jumping platform to allow it room to stretch. When the cord reaches its natural length the jumper either starts to slow down or keeps accelerating depending upon the speed of descent. One may not even start to slow until the cord has been stretched a significant amount, because the cord’s resistance to distortion is zero at the natural length, and increases only gradually after, taking some time to even equal the jumper’s weight. Safety and Equipment

Most deaths from bungee jumping occur because harnesses were not put on correctly. Therefore, it is important to have professionals help you put on your harness even if you are not a beginner. That means that you should go to a company or a club that specializes in bungee jumping. Make sure the club is certified by a government agency, such as the Occupational Safety and Health Administration or the British Elastic Rope Sports Association.
One of the most important services clubs provide is taking your height and weight measurements. This helps them fit equipment properly.
Ankle harnesses are usually secured to both legs, and they are often used in conjunction with other harnesses, especially body harnesses. When using ankle harnesses, it is best to have your body facing the line of the cord, especially when the cord becomes tight, or you could risk breaking your ankles.
Body harnesses are often attached to the stomach area to allow people freedom of movement with their arms and legs. This type of harness is similar to what people use when they are climbing. Another type of harness is the shoulder, or arm, harness. However, this should not be used by itself. Doing so would put your full weight on your arms, which could lead to a shoulder dislocation or other arm injury.
Along with fitting harnesses, professionals take steps to ensure a location is safe for jumping. Such work includes ensuring that the bungee cord is anchored properly and other equipment, including airbags, is used as needed.
For a safe jump, it is essential that the bungee cord is tied off in a secure location, one that is stable and will not be affected by added weight. Steel railings or safety fences often make good places from which to anchor. Professionals also will make sure that the bungee cord is tied with weight-bearing knots that will stay in place when gravity is pulling jumpers downward.
In some locations, companies may place airbags, webbing or slings at the bottom of a jump space to guarantee the safety of jumpers. For inexperienced jumpers, locations with airbags and webbing can provide a safer place to start.
Some companies may call off jumps due to inclement weather: Equipment may not work properly in rain, snow and other types of weather. Poor visibility and unstable wind conditions also increase the risk of injury.

Bungee jumping scenes can be found in many major motion pictures, including “GoldenEye” and “Selena.” Bungee jumping also has been part of television shows, especially reality shows such as MTV’s “Road Rules.” Bungee trampolines, which are found at community fairs and midways, allow a participant to jump on a trampoline while getting a boost from attached bungee cords.

There are many possible bungee jumping injuries. Miscalculating a cord’s elasticity, a faulty harness, or an improper connection to the jump platform can all cause injury. A bungee jumper can get hurt if the cord gets tangled with his body. A jumper may suffer rope burn, dislocated joints, bruises, whiplash, pinched fingers and injuries to his back. Transformers,have you ever heard? Now, the third season of  Transformers is releasing. It is ‘Dark of the Moon’.Next i will introduce it for you.

In 1961, the Ark, a Cybertronian spacecraft, crash lands on the far side of the moon. The crash is detected on Earth by NASA, and President John F. Kennedy authorizes a mission to put a man on the moon as a cover for investigating the craft. In 1969, the crew of Apollo 11 lands on the Moon to explore the craft.

In the present, the Autobots assist the US military in preventing conflicts around the globe. During a mission to Chernobyl to investigate suspected Alien technology, ambushed by Shockwave, Optimus Prime finds a fuel cell from the Ark, discovering it had survived its journey from Cybertron. After learning of the top-secret mission to the moon, the Autobots arrive to the moon to explore the Ark and discover a comatose Sentinel Prime – former Autobot leader – and his creation, The Pillars, a means of establishing a Space Bridge between two points to teleport matter. After returning to Earth, Optimus uses the energy of his Matrix of Leadership to revive Sentinel Prime.

Meanwhile, Sam Witwicky is frustrated that he is unable to work with the Autobots and failing to find a job. He also becomes envious of the close relationship between his new girlfriend, Carly Spencer, and her boss Dylan Gould. After finding work, Sam is provided information by his co-worker Jerry Wang about the Ark before he is assassinated by Laserbeak – a condor-like Decepticon. Sam contacts the now-retired Seymour Simmons, and together they realize that Megatron and the Decepticons are murdering people connected to the American and Russian space missions to the Ark. They locate two surviving Russian cosmonauts who reveal satellite photos of hundreds of Pillars being stockpiled on the moon. Sam realizes that the Decepticons raided the Ark long before the Autobots mission and intentionally left Sentinel and five Pillars behind to lure the Autobots into a trap – Sentinel being key to activating the Pillars and the Decepticons lacking the means to revive him. The Autobots rush to return Sentinel to their base for protection but Sentinel betrays them and kills Ironhide, revealing he had made a deal with the Decepticons to ensure the survival of his race.

Sentinel uses the Pillars to transport hundreds of concealed Decepticons from the moon to Earth and Carly is captured by Gould, who is revealed to be in the Decepticons’ service. The Autobots are exiled from Earth at the demand of the Decepticons to avoid war but as their ship leaves Earth it is destroyed by Starscream, seemingly killing the Autobots. The Decepticons, now led by Sentinel himself, seize Chicago as their agents place Pillars around the world. Gould reveals to Carly that the Decepticons plan to transport Cybertron to the Milky Way to use the resources and enslaved humans of Earth to rebuild their own world. Sam teams with Robert Epps to go into Chicago and save Carly, but they are nearly killed by Decepticon forces before the Autobots intervene; revealing they concealed themselves during the launch of their ship to convince the Decepticons they were destroyed.

Working together, the Autobots and human soldiers manage to rescue Carly and destroy Soundwave, Barricade, Starscream and Shockwave with Optimus using Shockwave’s arm-cannon to blast the Control Pillar, disabling the Space Bridge. Sam confronts Gould as he reactivates the Control Pillar. Sam knocks Gould into the Pillar, electrocuting him. Bumblebee and Ratchet then destroy the Control Pillar, permanently disabling the Bridge and causing the partially transported Cybertron to implode. Optimus and Sentinel fight while Carly convinces Megatron into not allowing himself to be replaced as leader of the Decepticons. Sentinel severs Optimus’ right-arm and prepares to execute him when Megatron intervenes, wounding Sentinel. Optimus attacks Megatron, decapitating and killing him. Sentinel pleads for his life but Optimus executes him. With the Decepticons defeated, Carly and Sam are reunited and the Autobots accept that with Cybertron gone, Earth is now their home.

How to cover your old chair seat

Old dining chairs are easy to find and even easier to restore. A coat of white paint will hide most imperfections and a newly covered seat will finish the look. Follow these steps to rejuvenate old chairs.

What you will need:

-Chair with drop-in seat;
-Ffine-grade sandpaper;
-Low-sheen acrylic paint;
-Paintbrush;
-Slotted (flat head) screwdriver;
-Staple gun;
-Small hammer (from hardware stores);
-Upholstery tacks;
-Calico (if the seat padding is in poor condition);
-Upholstery fabric (from fabric stores).

How to cover your seat :

Step 1:

Remove the seat by pushing from below and set aside. Sand the chair frame with fine-grade sandpaper. Use a damp cloth to remove any dust. Paint the chair frame and allow to dry, then paint a second coat.

 Step 2:

Remove the old fabric from the seat by sliding a screwdriver under the staples or tacks and easing them out. Keep the old cover to use as a pattern for your new cover. If the padding is in bad condition, you might want to cover it with calico first (use the same method as for covering, below).
 

Step 3:

The old seat cover as a pattern to cut the fabric cover. Ensure there is an 8cm excess of fabric around the edge for securing to the seat.

Step 4:

Place the fabric wrong side up and iron to remove wrinkles. Place the seat, wrong side up, on the fabric. Fold one side of the fabric over the seat and lightly tack in place. Repeat on the opposite side. Once the fabric is stretched smooth and tight, use a staple gun to secure in place. Repeat with the remaining sides. For a round seat, tack in four places then pleat the fabric evenly around the perimeter using a staple gun to secure each pleat. To finish, place the seat in the chair frame.

Many first-time visitors expect the city to be kitsch, but the casino owners are far too canny to be sentimental. Yes, there are a few Elvis impersonators around, but what characterizes the city far more is its endless quest for novelty. Long before they lose their sparkle, yesterday’s showpieces are blasted into rubble, to make way for ever more extravagant replacements. A few years ago, when the fashion was for fantasy, Arthurian castles and Egyptian pyramids mushroomed along the legendary Strip; next came a craze for constructing entire replica cities, like New York, Paris, Monte Carlo, and Venice; and the current trend is for high-end properties that attempt to straddle the line between screaming ostentation and “elegant” sophistication.

While the city has cleaned up its act since the early days of Mob domination, it certainly hasn’t become a family destination. Neither is Vegas as cheap as it used to be. It’s still possible to find good, inexpensive rooms, and the all-you-care-to-eat buffets offer great value, but the casino owners have finally discovered that high-rollers happy to lose hundreds of dollars per night don’t mind paying premium prices to eat at top-quality restaurants, while the latest developments are charging room rates of more like $300 than $30 per night.

Although Las Vegas is an unmissable destination, it’s one that palls for most visitors after a couple of (hectic) days. If you’ve come solely to gamble, there’s not much to say beyond the fact that all the casinos are free, and open 24 hours per day, with acres of floor space packed with ways to lose money: million-dollar slots, video poker, blackjack, craps, roulette wheels, and much, much more.

In addition, there are famous hotels such as The Plaza (formerly known as Union Plaza), overlooking Fremont Street, and the classic Golden Nugget . For nostalgia buffs, there is also the Golden Gate Hotel Casino , renovated to its earlier classic glory and appearance and still famous for the 99-cent shrimp cocktail.

Once a vast wasteland of buffets, Las Vegas has come of age in dining and drinking. Added to the list of celebrities are some of the top names in the culinary world. Visitors now have their choice of fine dining experiences, both on and off the strip.

Downtown Las Vegas has both historical and new restaurants. Although you’ll still have to deal with the crowds, the prices will be more reasonable than on the Strip. Grotto Ristorante at the Golden Nugget Hotel Casino is an Italian restaurant that uses only the freshest ingredients. Binion’s Ranch Steak House is the perfect place to have quality steak or seafood, make sure you try the Chicken Fried Lobster. If you just want a snack head to Sidebar , it was voted the best martini in Las Vegas and has great fried calamari.

Outside the City

If you need a break from hustle and bustle of the Las Vegas you can find the real deals outside the city. Go to Amigo’s Mexican Cantina for a Mexican meal paired with a margarita. Gold Rush Cafe is a family friendly restaurant with reasonable prices. If you want an all-you-can-eat option try the international buffet is the Feast Around the World Buffet , located a little ways outside the city at the Green Valley Ranch Resort Spa & Casino .

Las Vegas may be known as the “Sin City,” but it has a lot of great attractions. Certainly, the casinos and nightlife are what bring visitors here, but there so much more to do. There are several historic and interesting sites, that are perfect for guided or self-guided tours. 

Hoover Dam

The Hoover Dam is one of Nevada’s proudest possessions. It displaces the Colorado River and creates Lake Mead , a large man-made waterway. You’ll find a delicious meal at one of the many restaurants found within the Lake Mead National Recreation Area . At night, try the Lake Mead Cruise for dinner and dancing, as well as beautiful scenery. There is even a nearby theater, the Regal Boulder Station , that shows contemporary films.

Fremont Street Experience

In the center of downtown on Fremont Street is the Fremont Street Experience . Along the Fremont Street Experience is the Neon Museum is where you can enjoy historic Las Vegas neon signs. Close by is the City of Las Vegas Fire Department where children can have free guided tours of the fire department. If you get hungry, then head to Grotto Ristorante or Roberta’s Cafe and Steakhouse .

Beijing Roast duck is thought to be one of the most delicious dishes all over the world; most visitors coming to Beijing will never forget to have a try. Eating Peking duck is seen to be one of the two things you are absolutely supposed to do while in Beijing.


Special farms supply plump Beijing ducks weighing an average of 2.5 kilograms each. The two famous Beijing condiment shops, Liubiju and Tianyuan, supply the dark tangy bean sauce spread on the pancakes. The fragrant sesame oil and refined sugar are also specially selected. Finally, only the wood of fruit trees such as date, peach and pear are used in the roasting process to give the meat its unique fragrance.
Select a duck with whole skin. First the ducks are rubbed with spices, salt and sugar, and then kept hung in the air for some time. Cuts open the belly and draw, and then insert a 2 inch long piece of wood to support the chest bone and to stretch the skin. Hook the duck by the neck, spread diluted maltose over it. Hang the duck in an airy place to dry.
The stuffed duck is hung in the roaster and kettles of hot water are placed in front to fill out the duck. Proper timing and temperature are important and the duck is turned often enough to roast them completely and evenly. (Try 350°F turn every 15 minutes, total roasting time about 40 minutes). Roast until golden brown with rich grease perspiring outside and have a nice odor.

What is Beijing Duck Recipe?

Normally there are many dishes served with the duck, including a dish of fine-cut shallot bars, a dish of cucumber bars and finally a dish of paste-like soy of fermented wheat flour. It is not necessary to order extra soup, for the duck-bone soup is always included in you order. It will be served as the rear dish for the dinner.

History of Roast Duck

The art of roasting ducks evolved from techniques used to prepare sucking pigs.

The history of the roast duck can be traced back to as early as the Yuan Dynasty (1206-1368) when it was listed among the imperial dishes in the Complete Recipes for Dishes and Beverages, written in 1330 by Hu Sihui, an inspector of the imperial kitchen. Details regarding the cooking process were also described in this early cookbook.

In the early 15th century, when the Ming Dynasty capital was shifted from Nanjing to Beijing, roast duck remained one of the famous dishes on imperial court menus. According to the local history, the earliest roast duck restaurant in Beijing was the old Bianyifang Restaurant, which opened during the Jiajing reign (1522-1566). Distinct from the method in which the duck is hung from a hook in the ceiling of the oven and roasted over and roasted over burning wood, the Old Bianyifang Restaurant roasted its ducks with radiant heat. The walls of the oven were first heated with sorghum stalks whereupon the duck was placed inside and cooked by the heat given off by the walls. A duck roasted in this manner is crisp to the touch and golden brown in appearance; its flesh is both tender and tasty.

During the Qianlong period (1736-1796), roast duck was a favorite delicacy of the upper classes. According to Recipes from the Suiyuan Garden, the famous cookbook written by the poet and gourmet Yuan Mei, “Roast duck is prepared by revolving a young duckling on a spit in an oven. The chefs of Inspector Feng’s family excel in preparing this dish.” Other scholars, after dining on roast duck, were inspired to poetry. In one collection of old Beijing rhymes (Duan Zhuzhici) one of the poems reads: “Fill your plates with roast duck and suckling pig.” Another contemporary annotation reads: “When an official gives a banquet he will choose dishes to please each of his guests. For example, Bianyifang’s roast duck…”

To satisfy the growing demand for roast duck, and with an eye on the profits to be made from a good name, many restaurants opened from a good name, many restaurants opened under the Bianyifang name. In fact, in 1926, nine roast duck restaurants in Beijing carried this name. In the late 1960s the Bianyifang Restaurant’s name was changed to the Chongwenmen Roast Duck Restaurant, but in 1979 it resumed its former title. Its menu includes more than 20 traditional duck dishes, including the Four Delicacies: wing and web, liver, heart and pancreas.

Which restaurant is famous one?

The two famous restaurants that serve Beijing Roast Duck are Bianyifang  Roast Duck Restaurant and Quanjude Roast Duck Restaurant, both of which have a history of over one hundred years. They represent two different schools of roasting duck. Bianyifang, founded in 1855, makes use of a close oven and straw as the fuel, which won’t make flames go directly onto the duck. Before being put into the oven, a duck is filled with specially-made soup to make it possible to roast the duck outside and boil it inside at the same time.

Quanjude, a better known one, founded in 1864, uses an oven without a door. After a kind of dressing being spread all over a duck, it will be hooked up in the oven over the flame coming directly from the burning of the fruit-tree wood and it will be done in forty minutes. When roasted and dried, the duck will look brilliantly dark red, shining with oil and with crisp skin and tender meat. Because of its appearance, few people could resist the temptation of it.

The first restaurant to bear the name Quanjude opened in 1864 during the reign of the Qing Emperor Tongzhi. Due to its high standards, the restaurant’s fame spread rapidly and for many years the supply of roast ducks could hardly satisfy the demand. For this reason, the restaurant was rebuilt and expanded in 1948. In 1954 a branch (known as Hongbinlou) was opened in West Chang’ an Boulevard and another in Wangfujing Street in 1959. These additions, however, still did not solve the problem, and with the opening of the Quanjude at hepingmen in 1979, it was no longer necessary to make a reservation a week in advance to taste Beijing’s most famous culinary delight.

 

Beijing duck Ingredients:

1、One 5 to 6 pound duck
2、8 cups water
3、1 slice ginger
4、1 scallion, cut into halves
5、3 tablespoons honey
6、1 tablespoon white vinegar
7、1 tablespoon sherry
8、1 1/2 tablespoons cornstarch, dissolved in 3 tablespoons water
9、Scallions for garnish

Directions:

Clean duck. Wipe dry and tie string around neck.
Hang duck in cool, windy place 4 hours.
Fill large wok with water. Bring to boil. Add ginger, scallion, honey, vinegar, and sherry. Bring to boil. Pour in dissolved cornstarch. Stir constantly.
Place duck in large strainer above larger bowl. Scoop boiling mixture all over duck for about 10 minutes.
Hang duck again in cool, windy place for 6 hours until thoroughly dry.
Place duck breast side up on a greased rack in oven preheated to 350 degrees. Set a pan filled with 2 inches of water in bottom of oven. (This is for drippings). Roast 30 minutes.
Turn duck and roast 30 minutes more.
Turn breast side up again. Roast 10 minutes more.
Use sharp knife to cut off crispy skin. Serve meat and skin immediately on a prewarmed dish.

The duck is eaten hot with hoisin sauce rolled in Mandarin Crepes. Garnish with scallion flowerets.

How to eat it?

First, the chef will show you the whole duck. Then, he will slice it into about one hundred and twenty pieces with both skin and meat for each. Usually the duck is served together with special pancakes, hollowed sesame bun, green onions and sweet sauce.

There is a proper way to eat it. First, pick up a slice of duck with the help of a pair of chopsticks and dip it into the soy paste. How to Help Your Cat Beat the Heat

Heatstroke

You know the drill: the sun is blinding, relentlessly beating down reminiscent of a Stephen King novel. If you don’t have air conditioning, you seek out shady spots and sigh in relief from the slightest breeze, otherwise you huddle inside. Your thirsty body craves fluids, and the beverage of choice suddenly becomes water. If you stay in the sun too long you may become dizzy, have heart palpitations, and increased internal temperature, all signs of impending heat exhaustion.

Consider this: before you ever reach that point, your cat may also be showing signs of heat exhaustion or heat stroke. Although heat stroke is more commonly discussed in dogs, because of people’s propensity to leave them in parked cars, cats can be affected too. Cats can’t always tell you they’re not feeling up to par, but they sure can show you. Early symptoms of heat stroke and the accompanying dehydration are:

  • Panting
  • Anxiety, possibly demonstrated by pacing
  • Increased heartbeat
  • Respiratory distress or hyperventilation (Breeds with flat noses may exhibit this earlier because of compromised airways.)
  • Dark red gums
  • Lethargy
  • Increased internal body temperature Your cat’s internal temperature should be between 100.5° and 101.5° F. A temperature of 104° or more is a definite warning sign. Here is how to take kitty’s temperature.

How to Help Your Cat Avoid Heatstroke

You can help your cat survive extremely hot weather by keeping him indoors in a cool interior room. Rubbing him down with a damp towel will help; so will immersing his feet in a tub of cool water. Wrapping a cold compress under the cat’s neck will also help cool him off. He may fight at first, but most likely will appreciate it once he gets used to the idea. Try wrapping a plastic bag of frozen peas in a towel, and placing in in his bed for a cool spot to lie. The peas will rearrange themselves to fit his contours and he’ll have a “custom spa” for cooling off.

Make sure he has several bowls of cool water available. It doesn’t hurt to drop an ice cube in once in awhile, not only to cool the water, but to pique kitty’s interest in drinking. Strangely enough, cats affected by external heat may refuse to drink water, exacerbating the problem of dehydration, so you may want to “force” water by using an eyedropper or syringe. Be careful not to shoot the water down his throat as it can enter his lungs and/or cause choking. Just dribble a drop or two at a time in the corner of his mouth, which will help hydrate him and draw his interest to drinking on his own.

If your cat exhibits any of the signs above that lead you to think he is suffering heat exhaustion, cool him down as quickly as possible by immersing him in cool water, and then wrapping him with wet towels. Then get him to the veterinarian immediately. This is a serious, potentially fatal condition.

Sunburn

White cats, or cats with white ears and faces, are particularly susceptible to sunburn. Over a period of time, exposure to the sun can cause squamous cell carcinoma, a cancer found most often on the tips of the ears and nose. Early signs are a sore that does not heal, or that bleeds. My own introduction to squamous cell carcinoma was with our beloved little white cat, Arthur, who died of it at 18 years. Because of her age, we were reluctant to allow either surgery or chemotherapy, the two treatments of choice, and she passed on about three months after being diagnosed.

White cats should be kept out of direct sun as much as possible, and if they must be in the sun, you can help them prevent sunburn by using a sunscreen on their ears and noses. Your veterinarian can recommend one which will not be harmful if ingested.

The sun is a powerful giver of life and still worshiped by people all over the world, but it is not always your cat’s best friend. Be aware of his condition on sweltering summer days, and if you have any doubts at all, get him to the veterinarian immediately. You are the only defense he has.
